There’s something exciting about trying a new dish; it’s like an adventure for your taste buds. In the hands of a true professional, even a dish you’ve had dozens of times from one kitchen will taste extraordinarily unique from another and other times you’re diving into new territory of spices, seasonings and garnishes. It’s why unveiling new menus is the foodie equivalent to discovering a new ski run or finding a fresh water pond off your favourite hiking trail.
Chef Tristan of Canthooks Restaurant has been busy discovering the bountiful Ottawa Valley farmer’s markets, organic producers and creating new menus. He’s been forging for greens on the mountain, picking vegetables from our garden, smoking fish on planks of eastern white cedars taken from the property, harvesting our own sumac and rhubarb for sauces and making full use of wonderful maple syrup from our friends at Fultons Sugar Bush. New items include a seared trout, Brome Lake Duck, cedar smoked pickerel, roasted beet salad and many more. In addition to his culinary talents, Chef Tristan is a level 2 Sommelier which provides another layer to the experience guests can expect at the restaurant.

Chef Tristan Hertzog, a young executive chef who has risen through the ranks from prep cook to preparing dinner for the Royal Family, is now leading the food and beverage team at Calabogie Peaks Resort. Chef Tristan comes to Calabogie most recently from the Mission Hill Estate Winery in Kelowna, British Columbia. With a growing young family Tristan and his wife chose to move east to be close to their extended family in the Ottawa Valley.
With a host of experience garnered from high level establishments including the Eagle’s Eye Restaurant, Canada’s highest elevation restaurant; the award winning Emerald Lake Lodge; an all organic restaurant The Cedar House and The Post Hotel, a Relais & Chateau property, the Peaks is delighted that Chef Tristan will call Calabogie his new home.
As Resort Chef, Tristan will be reviewing and reworking all of the menus throughout The Resort including our banquet and corporate menu selections.
Chef Tristan looks forward to visiting the local farmers markets, seeking out organic food suppliers, foraging for supplies in the field all the while creating menus that best reflect the Ottawa Valley and his personal flare. In addition to his culinary talents, Tristan is a level 2 Sommelier which will provide yet another layer to the experience that guests of Canthooks Restaurant will enjoy.
